I'm supposed to be transforming an XML into THM EAD but cannot find it in my configure transformation scenarios. Is this something I need to write myself?

Please note that there is no out-of-the-box support for transforming LoC's finding aids EAD.

There are predefined transformation scenarios in oXygen for the most common document types (DocBook, DITA, TEI) and output formats (PDF, HTML, WebHelp).
However, for EAD you should use a custom XSL to achieve the expected output.
Also, in case you do not have one, you should develop the XSL, so this would imply advanced XSLT knowledge.
