Proper way to customize FOP for one document?

I'm writing DocBook documents, processing to PDF using FOP (and XEP's trial), using oXygen. For one document, I'd like to use the information in Bob Stayton's DocBookXSL book about customizing the font sizes for headings.
My question is: where/how do I make these customizations? Do I create a new XSLT stylesheet with, for example, new definitions of the section.title.properties attribute set? Will these definitions cleanly override the ones defined by default? What is the format of an "additional XSLT stylesheet"?
Alternatively, it seems I could write a new "master" xslt stylesheet that imports the default one, then overrides the parts I care about.
In either of these scenarios, I feel I'm treading far enough off the beaten track to make me nervous. Of course I first made sure that the things I want to change aren't in the "Parameters" section of "Edit scenario".
