The action you're looking for is "Go to Matching Tag"(Ctrl+Shift+G) found in the contextual menu(exactly as you thought but never checked). This action jumps alternatively between the start and end tag.

Unfortunately Eclipse uses a window with a list for content-assist, not a drop-down menu, so the colors that apply to drop-down menus wouldn't be useful here.

I'm afraid that there is no option in Oxygen that can accomplish this, not when first introducing the element and neither when formatting the document.
You could probably write an extension(Oxygen plugin) that does this automatically for you.
