Open a DITA document and in the main menu go to: DITA -> ID Generation Options. There you can set the ID pattern and add/remove and edit the element names or classes for which to automatically generate IDs.

To use a custom stylesheet in the Schema Documentation dialog you have to switch the "Format" to "Custom", press the "Options" button and browse for the modified stylesheet in the "Custom XSL" field.

No, I'm afraid there's no validation against any of these additional schemas. The schemas are only used for content completion.
I have to investigate a little if there's some way to do this with a custom validation scenario.
