With XSLT/XPath 2.0 it is exactly
  <xsl:apply-templates select="node() except label"/>
With XSLT 1.0 you can use
  <xsl:apply-templates select="node()[not(self::label)]"/>

If you are only interested in element child nodes and not all kind of child nodes then use
* except label
respectively
*[not(self::label)]
