Well, a default template is the way we normally handle that.  At
the top of many stylesheets which are mostly copying the input data
you will find something like this:

  <xsl:template match="@*|node()">
    <xsl:copy>
      <xsl:apply-templates select="@*|node()"/>
    </xsl:copy>
  </xsl:template>
