NOW TO MY QUESTION:
"./../Pictures/<xsl:value-of select="number(id)"/>.jpg" gets me the
string, but how do I insert it as the src?

try the attribute value template:
<img border="0" src="./../Pictures/{id].jpg" width="400" />
