These days, Macs have excellent support for Java. You have lots of choices. Not only in Java, even. libxslt should also work very nicely (and I see MacOSX binares linked from its page at http://xmlsoft.org/XSLT/).
In fact I'd kind of like to see from Mac users what their favorite processors are. Saxon, Xalan, libxslt ... what have I missed?
