well that says when you match a table then, if it has a child element
output the value of the tables p attribute. (which is probably nothing)
The template is unlikely to be applied to xhtml:td as thi stemplate
never applies templates to the children of table.

The template also matches xhtml:TABLE  although if your input is valid
xhtml there will be no such element.

I think you want

<xsl:template match="xhtml:table">
 <xsl:value-of select="."/>
</xsl:template>

which gives you the character data from the table, although in general
this mightbe hard to read since all table markup has gone.
